RECIPE: Cherry Tart and an intro to “801010”

I’ve mentioned before how much I love Kristina Carrillo-Bucaram but this recipe is really the reason I love her so much.

She’s a pretty impressive little package of epic energy and passion. She also is a business genius for the fact that we are the same age yet she’s already built a Co-Opportunity empire in Texas. She is a fully raw vegan advocate, of the 801010 variety. This lifestyle has been launched into popularity by Douglas Graham and his easy-to-read book, The 80/10/10 Diet (affiliate link). He outlines why he recommends this way of eating and also provides some very basic recipes to get started.

Kristina took this lifestyle to the next level, making it fun, easy, delicious, and approachable.

For the record, I am not an 801010-er but I do love the lifestyle and I do use a lot of the information in my food choices.

What is this mysterious 801010? The numbers stand for the recommended balance of macronutrients: 80% carbs, 10% protein, 10% fat. Being in Miami makes it difficult to even mutter these words. People are often ashamed to speak with someone that eats so little protein. But what is astounding to me is that there is protein in everything and even without trying I’m getting enough.

I’m not the only non-protein-obsessed person to be able to run countless miles, hold difficult yoga poses balanced on my hands, work 13 hour days, and then sleep like a baby … Compared to others, this is nothing. I really recommend you take a look at Kristina’s workout schedule, along with Freelee .. They are serious athletes and they practice the 801010 diet, fully.

The other part of this that makes people cringe is the 80% (of calories) come from carbs. CARBS! For some reason the food industry has demonized carbohydrates as the secret source to weight gain. Truthfully, carbs are essential to our energy output and we consume them, on this diet, in the form of fruits and veggies. Tell me, when was consuming lots of fruits and veggies ever a path to weight gain??

Never. That’s when. 

The remaining 10% of calories come from fat. This is where most raw vegans run into difficulties only because so many raw foods are so high in fats. While I don’t religiously count my macronutrients I do strongly believe that we are not meant to eat 40-50% of our calories from fat. So I do limit my fat intake to reasonable amounts each day. (what’s reasonable? I don’t know, only one serving size of nuts, not an entire nut-based dessert. Only 1/4 to 1/2 an avocado, and 1-2 tablespoons of nut butter .. sometimes once a day and sometimes all in the same day!)

I’ve written about protein before so I won’t re-break it down. But what’s important to know is that protein shakes are NOT healthy nor are they necessary. Obviously I don’t eat meat yet I’m very healthy and have adequate protein. If you do eat meat then you are getting loads and loads of protein and you really do not need additional excess protein in the form of chemical protein powders and shakes.

So this is a very basic breakdown of the 801010 diet. Do a little bit of research and maybe even give it a shot! Every body is different and every body responds differently to this diet. What I do know is that the food is DE LI CIOUS.

I used the same ingredients to make my own version. And I have to report that when my SO bit into it he exclaimed, “Now THIS is a dessert!! This is, by far, the best thing you have ever made!” … I mean, I’ve made a lot of good things so I wouldn’t take it that far (hehe) but I think he’s right. It is in my top 5 favorites. He licked the plate. Literally. Like a child, he licked the plate clean.

I used almonds (1/4 cup), cinnamon, and soaked dates (1/4-1/2 cup) for the crust. I whirled them in the food processor until it was crumbly and then pressed down into a tart pan. I stuck it in the freezer to set while I prepared the filling.

The filling is just soaked dates and cherries. I used about 1/2 a cup of dates (soaked, pitted, peeled) and then about a cup of cherries. That’s it! Blend until a pudding is formed.

I lined the tart with chopped cherries and poured the filling over the top. It was AH-mazing.

Every time I think about it I begin to crave it. As a warning, it may be a bit sweet for you if you don’t like sweets. If that’s the case then just scale back the dates.
