Combined with canned pumpkin and you’ve got yourself a moist, warming, delicious pumpkin cookie.

So I rounded up some pumpkin cookie recipes from other bloggers and am sharing them here with you. These vegan cookies will make you feel like you’ve stepped right into the holidays.

Vegan Pumpkin Cookies with Maple Frosting

These vegan pumpkin cookies are soft, big, and fluffy. The autumn flavors and dairy-free maple frosting are a perfect fall treat!

Ingredients:

For the vegan pumpkin cookies

  • 2 ½ cups gluten-free flour blend use a blend that is a 1:1 sub for all-purpose flour (or use all-purpose flour if you don’t need it to be gluten-free)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon plus more for dusting the tops, if desired
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • ½ cup dairy-free butter sticks softened to room temperature (I use Earth Balance)
  • ¾ cup organic cane sugar
  • ½ cup coconut sugar or brown sugar
  • 1 cup pure pumpkin purée (not pumpkin pie filling)
  • 1 teaspoon pure vanilla extract

For the maple frosting

  • ½ cup dairy-free butter sticks softened to room temperature (I use Earth Balance)
  • 2 ½ – 3 cups organic powdered sugar
  • 4 tablespoons pure maple syrup
  • ½ teaspoon pure vanilla extract

Soft Pumpkin Molasses Cookies

Try these soft pumpkin molasses cookies for a super delicious and chewy treat. The fall-inspired flavors will hit the right spot!

Ingredients:

  • 2 ⅓ cups of all-purpose flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ground ginger
  • 1 teaspoon of sea salt
  • ¼ teaspoon of ground cloves
  • 1 cup of sugar
  • ½ cup of pumpkin
  • ½ cup of canola oil
  • ¼ cup of molasses
  • 1 Tablespoon of flax meal

These healthy, whole grain pumpkin chocolate sandwich cookies are delicious and really hearty cookies. They are sweetened with dates and contain no sugar or sweeteners. Great to enjoy for breakfast or snacks!

Ingredients:

For the cookies:

  • 2½ cups / 225 grams oats (rolled, old-fashioned, or quick), (certified gluten-free if necessary)
  • 12 Medjool dates, pitted
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup / 4 tablespoons nut or seed butter
  • ¼ cup / 4 tablespoons pumpkin puree, or banana puree
  • 2 teaspoons molasses
  • ½ teaspoon salt

For the filling:

  • ¼ cup / 4 tablespoons nut or seed butter
  • ¼ cup / 4 tablespoons pumpkin puree , or banana puree
  • 2 Medjool dates, soaked in hot water for a few minutes
  • 4 tablespoons cocoa, or cacao
  • 1 tablespoon maple syrup, OPTIONAL. Only use it if you want the filling to be a little sweeter

Soft & Grainless Pumpkin Spice Latte Cookies

These pumpkin spice latte cookies are so pumpkin-y that it’s even made with pumpkin flour! It is soft and pillowy, and definitely much more healthy than drinking a pumpkin spice latte.

  • ½ cup pumpkin flour
  • ½ cup arrowroot starch
  • 2 tsp baking powder
  • ¼ cup unsweetened almond milk (or non-dairy milk of choice)

  • 1 tsp instant espresso powder
  • 40 drops vanilla stevia
  • chocolate sprinkles (optional topping)
